How One Woman Beat Cancer With Food

More than 20 years ago, when I was 47, a doctoral student in psychology, I was diagnosed with breast cancer. Of course I was frustrated. I’ve been running for 15 years, and I’m the fittest person I know. I don’t understand that I have cancer.

After surgery, further tests confirmed that the cancer had spread. However, instead of the recommended radiation and chemotherapy, I put my faith in Dr. John McDougall, a doctor who has done research on the link between a vegan diet (no animal products) and breast cancer. Although I had previously stopped eating red meat, when I was diagnosed I was still eating other animal products and my blood test showed high cholesterol levels. Therefore, with the help of Dr. McDougall, I cut out all animal products, including fish and dairy. Today, as I approach my 70th birthday without cancer, I enjoy a vegan diet and daily jogging. I am an Ironman Triathlon champion for six years, with over 900 gold medals at every distance from the 100m to the 5K to ultramarathons and triathlons. I have completed over 60 races around the world and set three world fitness records in my age group at the Cooper Clinic in Dallas, Texas. In 1999, I was named one of the “Top Ten Women in North America”.

I also changed my academic studies. I was so impressed with what the new diet did for me that I switched from psychology to health education, with a major in nutrition and exercise physiology. I am completely convinced that my vegan diet is an important part of my long-term health. Also, since most plant foods are low in calories (except nuts, seeds, avocados, olives, and coconut), I eat more than most people and maintain a healthy weight. health. So, I’m never hungry. From 1982 to 2000, I ate a vegan diet that included grains and processed foods.

I start my morning with oatmeal, a banana, and raisins soaked in water or apple juice and a tablespoon of blackstrap cabbage. To increase the nutritional value, I added vegetables such as kale, edible hibiscus, seaweed or cabbage. Sometimes I had pancakes or waffles covered in applesauce or fruit (not butter or margarine).

Lunch can be made in several ways such as baked or microwaved potatoes with carrots and broccoli, whole wheat pita bread with chopped mixed vegetables, whole wheat bagel with orange and apple , or brown rice mixed with succotash. When I ate lunch at a restaurant, I usually asked for a bread sandwich — one whole grain loaf or two slices of bread. I then filled the bread with vegetables, tomatoes, bell peppers, and onions.

Dinner was the same as lunch. Or, it includes options such as spaghetti made with whole wheat pasta and a sauce prepared with tomato pasta, onions, garlic, bell peppers, chopped broccoli, and spices, or peppers made with kidney beans, tomato sauce, onion, garlic, bell pepper. , chili pepper and a lot of red rice. Made a pizza with whole wheat dough covered in tomato sauce with chopped green onions, round onions, bell peppers, mushrooms, and alfalfa sprouts.

Between meals I never let myself get hungry. I ate fruit, carrots, whole grain bread, popcorn, and potatoes. To avoid temptation, I did not keep high fat foods in my house. For dessert I ate fruit or popcorn.

In 2000, I eliminated grains and processed foods from my diet. I only eat raw food now. Since I start most days with three to four hours of exercise, usually consisting of an hour of cycling, weights or swimming, followed by an hour of running, I skip breakfast. if not in the morning. Then, I have a big bowl full of greens, a carrot, half a mango, a big banana and six big grapes. The mixture is topped with one scoop of B12-protected nutritional yeast and one to two scoops of blackstrap molasses.

Since breakfast is so late, I don’t have a full meal until dinner. Dinner includes plenty of vegetables such as broccoli, kale stalks, celery, unpeeled English cucumbers, cabbage, a carrot, half a bell pepper, a large tomato, six cloves of garlic, and half a raw sweet potato. Add a cup or two of salsa, a tablespoon of regular mustard, and a tablespoon of freshly ground sesame seeds to the mixture.

Dessert includes blueberries and other fruits, a handful of peanuts, and a spoonful of blackstrap molasses. During the day I eat carrots, celery, grapes, dates, and in the evening I eat air-popped popcorn.

As long as you eat enough calories, you can’t go without protein. Because all vegetables contain all the essential amino acids, you will get all the essential amino acids you need from a plant-based diet. Plus, since you’re getting calcium from the same sources as cows – that is, plant-based foods, especially vegetables – you’ll have enough calcium.

Although you should drink plenty of water, I also recommend two other drinks. To replace your morning coffee, try drinking a glass of warm water with a tablespoon of blackstrap molasses. And, since I live in Hawaii, where it’s always hot outside, I like to keep a jar of homemade lemonade in the fridge. I make it by squeezing half a lemon into a half gallon jug of water and then adding a little sweetener.

My raw vegan diet gives me incredible energy. Of course, without such strength, I would not be able to compete in any of my events, especially the Ironman Triathlon. I hardly ever miss a day of school. On the plus side, I sleep like the proverbial rock.

In addition to changing your diet, now is a good time to change your behavior. One of the most important things you can do is to incorporate regular exercise into your life. To stay motivated, you should consider joining a group. Although I had been running on my own for about 15 years, after joining a running group I increased my distance and started challenging myself. And, if I find swimming alone a bit boring, swimming in a group is fun. In the event of an accident or mechanical failure, at least one cyclist should be included. Besides, it’s more fun to ride with other people. Where I live in Hawaii, there is no shortage of people who want to travel. Over time I have come to realize that triathletes are some of the most social people I have ever met. So, whatever your age, give it a try. When exercise is fun, you won’t mind doing it!
