Comparing Apples to Apples – Hydrated Weight Vs Dehydrated Weight – Home-Dried Vs Store-Bought
In the interests of scientific research into what happens to apples when they are dehydrated, I conducted an experiment.
In fact, it was purely curiosity that led to the study – the apple just needed to be dried.
To be continued: 4 apples were weighed before dehydration. Its weight is from 7 to 7.5 inches. Apple slices are soaked for 5-10 minutes in a mixture of lemon juice and water. This pre-treatment helped to maintain structure and nutrients, and to prevent oxidation (the change in color during drying).
Four dehydrator trays were used, with one apple per tray. This ensured the weight of the apple after dehydration. The trays were placed in the dehydrator according to the weight of the apples.
- 1 serving: 7.25 ounces
- 2 servings: 7.50 ounces
- 3 servings: 7.00 ounces
- 4 servings: 7.50 ounces
The apples were dried at a temperature of 135 degrees for about 13 hours. After dehydration, each apple was weighed again. The trays were removed from the refrigerator in the order of the apples at the first weight.
- 1 serving: 1.25 ounces*
- 2 servings: 1.25 ounces
- 3 servings: 1.00 ounces
- 4 servings: 1.25 ounces
*round to the nearest.25 ounces; the actual weight is slightly less
On average, each apple lost about 16.22% of its original weight, and the overall loss was 16.24%. The 4 apples are divided into 9 small bags for easy carrying in the lunch box. They were kept in glass containers until then.
Total apples at $1.99 per pound, cored: $3.64. The lemon juice added quite a bit. Total dry apples: $0.77 per ounce.
How does it compare to store-bought dried apples?
There was only 1 brand to compare – surprising for such a large chain store. A 2.5-ounce bag of apples costs $1.99, or $0.80 per ounce– a total of $0.03 less than at home.
Before you say the savings aren’t worth the trouble of draining your own water, consider what you’re getting for your money.

- Homemade apple chips are apples that have been cooked in lemon juice and water.
- The store-bought apple chips contained apples; safflower, sunflower, and/or canola oil; corn syrup; sugar; dextrose; citric acid; ascorbic acid; malic acid; and natural flavors.
