Chocolate: The Good, the Bad and the Bitter

We know for sure that chocolate appeared with the Aztecs as a royal drink. The cacao bean, from which the drink originated, was highly valued and used as a form of currency. When Hernando Cortez, the ruthless conqueror, set his sights on the Aztec nation, King Montezuma introduced him to the bitter drink. Cortez looted their land and took their land, including the cacao factory.

Cortez returned to Spain, unaware of what he had encountered until some leading chemists added sugar and honey to the bitter drink and happily introduced a drink that became the forerunner of hot chocolate, introducing the the world’s love for chocolate. In the 17th century, Europe’s elite happily guzzled down the expensive new drink (and waistlines grew with it, surprisingly). And with the promise of an aphrodisiac, as well as medicinal power, it is little wonder that it has been removed.

But, unfortunately, until mass production in the last half of this century, people could only dream about it, because the price was too high and the Easter bunny was a distant dream. In the early 1800’s, the Dutch discovered a way to make powdered beans less bitter and paved the way for our present cocoa, which is still called “Dutch chocolate”. Hard chocolate soon formed, and Katy barricaded the door, Europe developed an insatiable sweet tooth. Mid-1800s. An ingenious man named Joseph Fry took chocolate paste and a few other ingredients and sliced it into a mold, where it hardened and became the first chocolate. A few decades later, the Cadbury company began selling boxes of this glorious food in its home country of England.

Switzerland, a country synonymous with chocolate, had a hand in the creation of milk chocolate and became the brainchild of the Nestle company. Sounds familiar?

Not to be left out of the mix, American soldiers carried chocolate during the Revolutionary War, and sometimes used it as pay, when money was short (work for me). The value of cocoa beans has been reset.

Today’s chocolate production in the United States alone is a staggering $4 billion industry, with the average American consuming over half a pound per month. Which can easily translate into gaining too much weight!

Chocolate is synonymous with the name Hershey. Founded by Milton Hershey in rural Pennsylvania in 1886, it began as a caramel business. Mr. Hershey soon branched out into chocolate production and introduced the first Hershey bar eight years later, with the clear goal of making chocolate an affordable treat for the common man. Not content with just one company, he built an entire town for his employees, and Hersheytown, PA came back to life. Hershey’s Kisses appeared in 1907 and were wrapped by hand at first, which required an all-day meeting of wrapping women, but the end result was worth it. In 1926, Hershey’s syrup hit the market, and every child could add it to their milk or drizzle it on their ice cream. Not only an entrepreneur but also a philanthropist, Hershey created jobs for people during the Depression and gave to the orphans of Hersheytown.

Many foreign countries supply cocoa beans to support the world’s chocolate habit, and the value of chocolate is much more than a delicious candy. Many of these countries around the world depend on the export of cocoa beans. For example, the small island of Playon Chico, off the coast of Panama, welcomes foreign aid to increase production. A somewhat isolated people, they see the bean as medicine and begin to export it for much-needed income.

There seems to be no end to the glorious product called chocolate. In the US, candy ranges from cheap drugstore brands like Whitman’s and Russell Stover, to the high-end imports of Godiva, Lindt, Ghiradelli and Roche and everything in between. The original producers of chocolate and candy, Nestle and Cadbury, are still alive and well. (This writer prefers Chicago-based Fannie May)

So whether you want a rich truffle, a Snickers bar, a few Hershey kisses or a thick chocolate sauce on your chocolate ice cream, from milk to semi-sweet, powdered or hard, bake with it, eat it straight or order it mixed. with your favorite coffee, it never stops. And are we not grateful?
