It should be ensured that the internal temperature is 165 to 170 degrees. Another way to look at it is to pull the thighs away from the body. If the juice is clear and not pink or red, the chicken is probably done. The average weight of a cooking chicken is between 3 and 3 ½ pounds. This will yield 3 to 3 ½ cups of cooked meat. I think I would roast a whole chicken instead of a chicken- a deboned chicken. Butterflied chicken will cook faster. However, if you are roasting a larger bird, be sure to adjust the cooking time accordingly. 20 to 25 minutes per pound is a good rule of thumb! Good luck!
