The Health Benefits of Cheese at Your Mexican Grill

Cheese is delicious. It’s one of nature’s greatest gifts, we think. Cheese fills everyone’s heart with happiness, your mouth with joy and your soul with goodness. We know that’s a bold statement. It’s hard to take face value when there are so many other cheeses available, in all kinds of cultures and all kinds of foods. Even Mexican grilled food occasionally embraces other types of cheese, though we suspect it’s a slightly reluctant kind of foray into the world of cheeses that aren’t the beauty and perfection that the cotija is more than happy to bring to the table.

So why is cotija the most prized of cheeses? Why does “Mexico’s Parmesan” (but much better than Parm in our opinion!) keep going?

Cotija is a salty, crumbly and incredibly tasty dairy cow cheese named after the city of Cotija in Mexico. It’s a classic South of the Border ingredient, loved for its zesty zip and unique texture. It is known as el queso de montaña, or mountain cheese, because its producers live and make it high in the mountains. And it is here that it also takes on its flavor and color: the milk that makes the cotija comes directly from the cows that have nibbled on the rich mountain grass that grows only during the short rainy season.

It’s heavily flavored, great for grating, and found on so many Mexican grilled dishes (as it should be). From salads to soups, from tacos to tostadas, everything is enhanced by the magic of cotija. Most importantly, and perhaps because the Pied Piper has the stamina to keep chasing the rats, cotija cheese is about more than just the flavor—it’s good for you, too.

Like most dairy products, cotija is an excellent source of protein that we need to build our heart tissue and other muscles and keep us healthy. Just one one-ounce serving gives you 7 grams of protein, or a whopping 14 percent of the recommended daily amount of protein. Even better, cotija has plenty of bone-building calcium.
